Ontake The First Edition 2023 is a single malt Japanese whisky from the Ontake Distillery, which is part of Nishi Shuzo’s venture into whisky production. This inaugural release marks a significant milestone for the distillery, which began its operations in 2019 in the Kagoshima countryside, specifically in Hioki City.

The distillery itself is located in a picturesque setting atop the hills of Kagoshima, overlooking Kinko Bay and the iconic Sakurajima. It utilises natural soft water that gushes out at over 1,000 litres per minute, which is crucial for the whisky’s production. The distillery’s design ensures that only the “fruity and deep flavour components”are extracted during distillation, aiming for a clean, mellow fruit aroma and a balanced flavour.

Ontake The First Edition 2023 is matured in first-fill solera sherry butts, a choice that influences its flavour profile significantly. It is presented in a wooden box, enhancing its appeal as a collector’s item or a gift.

Tasting Note

Colour

The whisky has a beautifully clear, slightly reddish amber colour, which is indicative of its aging process in sherry casks

Nose

The aroma is rich and aromatic, featuring a well-balanced blend of baked apple, pear compote, and apricot. There are also hints of citrus peel, spice, and toasty savoury notes, creating a complex and inviting olfactory experience.

Palate

The flavour continues the theme set by the aroma, with a rich sweetness reminiscent of dried fruits like raisins and figs. There are additional notes of pear compote and apricot, alongside some spices. The overall palate is rich and enveloping.

Finish

The finish of Ontake The First Edition 2023 is warm and lingering, with spices and a subtle yet distinct note of chocolate, rounding out the tasting experience with an elegant sweetness and bitterness
